Grated Red Leicester, Carrot and Apple

Preparation

Simply disguise grated carrot in with Red Leicester and add a little chopped apple for added crunch. I always leave the skin on the apple and carrot to give added fibre and keep in as many vitamins as possible.

Serves 1.

1. Butter each slice of bread and set to one side.

2. Mix together the cheese, carrot and apple and arrange evenly over one slice of bread.

3. Top with the remaining slice and cut into 4 triangles. Wrap in greaseproof or foil ready for the lunch box.
