Bread sauce

Preparation

Put one small chopped onion, one whole clove (or ground mace) and a few peppercorns into small pan with 2 torn bay leaves. Immerse these two ingredients in 570ml milk and 50g of butter.   Bring to the boil and then simmer gently for approximately 20 minutes. Once the onion softens, remove from heat and allow to infuse for 1 hour or chill overnight. Remove the bay leaves and peppercorns and stir in about 200g of evenly torn up bread pieces without crusts. Add freshly grated nutmeg & season to taste. Reheat mixture, simmering for 3-4 minutes before removing from heat and stirring in a few tablespoons of double cream. The sauce is now ready to serve.

  • 200g Day old Hovis Wholemeal bread (approx 8 slices of Hovis Wholemeal bread) remove crusts
  • 1x Small onion (chopped)
  • 1/4 teaspoon ground mace or nutmeg or ½ teaspoon or 1x whole clove
  • 2 bay leaves fresh or dry
  • 570ml fresh full fat milk (could used semi skimmed for healthier option)
  • 50g butter (optional extra knob for serving) or use low-fat spread/margarine
  • 1/2 teaspoon freshly grated nutmeg
  • 3 tablespoon double cream
  • 6 peppercorns (optional)
