Bread & Butter Pudding

Preparation

This is a flexible pudding where alternative or additional ingredients can be used. Preheat oven to 180C or gas mark 4. Cut 8 slices of bread into soldiers and layer these with some mixed dried fruit in small baking dish or oven proof dish creating a lattice style.   Beat 3 eggs with 2 level tablespoons of caster sugar & a few drops of vanilla essence. Then beat 200ml of milk & 100ml double cream together and mix into the egg mixture. Pour this over the bread & dried fruit lattice and sprinkle 2 tablespoons of brown sugar. Apply a little pressure so all the bread mix is soaked in the milky source.   Allow the pudding to rest in a cool place for 1 hour before baking for 30 minutes. Allow the cooked pudding to rest for 10 minutes before serving.
