Best Of Both Bruschetta

Preparation

It’s easy to keep everyone happy when they can choose their own favourite toppings. The bread takes on all the delicious Mediterranean flavours.

Serves 1.


1. Preheat the oven to 210C, 425F, Gas 7.

2. Sandwich the 2 slices of bread with the chorizo and place on a non-stick baking sheet. Drizzle over a little oil.

3. Bake the bread for 5 minutes, flip it over, drizzle with a little more oil and return to the oven for a further 5 minutes.

4. Remove from oven when very crispy. Rub both sides with the garlic clove.

5. Toss the tomatoes, pepper, mozzarella, basil and remaining oil together. Season to taste.

6. Pile onto the bruchetta and eat straight away.

  • peeled 2 ripe tomatoes
  • chopped ½ small red pepper
  • chopped 40g/1 ½ oz mozzarella
  • chopped fresh basil leaves
  • torn
