Poached Salmon and Herby Yoghurt Sandwich

We have put together 6 lunch recipes that are healthy, nutritious and tasty.

Serves 1
What you need
2 tbsp (30ml) 0% greek yogurt
2 tsp (10ml) fresh lemon juice
2 tsp (10ml) freshly chopped tarragon
1 tsp (5ml) freshly chopped chives
50g poached or steamed skinless salmon fillet 
2 slices Hovis Hearty Oats bread
Handful fresh watercress leaves
How to make it

1. While bread is toasting, mix together the yogurt, lemon juice, herbs and season with freshly ground black pepper in a small bowl. Flake the salmon and gently stir into the dressing.

2. Place 1 slice of toast on a board and top with the herby salmon mixture. Add the watercress leaves and place the remaining slice of toast on top. Cut into triangles and serve.
